This turned out so delicious … soft and chewy, sweet and guilt free. Let me introduce you to my raw low fat Cinnamon Rolls, naturaly sweet. You de need a dehydrator for this one plus you need to start a day or so before you need them. So start NOW!
The base or dough is made of realy ripe plantains, black on the outside. When black, it can be even darker then mine on the pic below, then you can eat it raw and it is so delicious and sweet, almost pudding like, different from a banana. The filling is made of dates and apples, realy basic but so good. Some flavouring added, cinnamon and vanilla.
Ingredients for about 10 1 inch slices,
- 3 big ripe plantains, skin removed, chopped
- 3 tbsp. chia seeds
- 1 tsp. vanilla essence
- 1 cup of pitted dates
- 2 big apples, cored and peeled
- 1/2 cup soft raisins or dried chopped apricots, optional
- 1 tsp. cinnamon
Blend the plantains, vanilla and chia seeds and pour the dough on a dehydrator sheet. This is enough for one layer, it should be nice and thick because it will shrink a bit. Place in the dehydrator for about 10 hours on 110F, it should be firm enough to flip to a clean surface like a parchement paper.
Blend the chopped apples, dates, cinnamon. Fold in the dried fruit and spread on the flip side of the dough. I left an inch or so on the horizontal sides open, makes ir easier to roll. Roll it up, don’t push it too much. With a sharp knife cut it into about 10 pieces, about 1 inch thick and lay them on a dehydrator sheet, the one with the holes to enhance drying. It takes about another 8 to 10 hours until you get the right texture, softer or more chewy, depending on your taste. I did turned them once during these hours.
