Two wonderful, easy and quick dressings, both with mango. Nothing more delicious then a fresh green salad on a warm summer night …. Both dressings are made of ripe sweet mango’s, a perfect combnation with green leafy veggies.
Lots of fresh spinach, a handful of arugula for extra flavour mixed with a dressing made of a generous cup of blended ripe mango cubes. I always put “ripe” to emphasize the importance of ripeness. Fruit is cleansing and mildly alkalizing for the body when ripe. As it should be!
A big handful of blueberries to add a little texture and more nutrients and color. This is also a great breakfast salad.
Besides being raw fruit also needs to be combined the right way for optimal digestion. Fruit can be combined with all kinds of leafy greens in smoothies, salads and juices. Amounts also mather. Adding a tbsp. of chia seeds to a big smoothie or a little piece of avocado to a sweet dressing will not throw off the balance that much, except when you are having digestive issues, then is it better too keep it separate.
Combining fruits can especialy be important when you are having some digestive issues like bloating and gas. Sweet fruits like bananas, figs, dates, papayas are better not combined with sour fruits like oranges, pineapple and lemon. They both can be combined with semi sweet fruits like apples, pears, peaches, apricots etc. Melons are best eaten alone. The less varieties you combine, the easier it is on the digestion.
Mango Basil Dressing
Dressing for one big salad,
- 2 cups ripe mango cubes
- handful fresh basil leaves
- 1/2 small avocado
Blend avocado andmango until creamy Add torn basil and pulse a few times. You should be able to see small green spickles. Great as a dressing or dip.
My salad is made of grated zucchini, cucumber, fennel bulb, broccoli on a bed of chopped romaine lettuce.
Mango is also wonderful in combination with chilli pepper, cilantro, ginger, miny, vanilla & star anise, not at all at the same time! Click here to read more about foodcombining in general.
Summer is such an abundant time fruit wise! I so enjoy melons, cherries, apricots, berries … all the wonderful produce I have been avoiding for years. Affraid o sugar and it’s doing on the body. I have been learning so much these last couple of months, made some amazing discoveries which make my life, joy, health and energy so much more complete. So greatful for that!
